Maple Walnut Muffins

1/2 c. (1 stick) unsalted butter, softened
1 c. sugar
2 large eggs
1/3 c. whole milk
1/4 c. pure maple syrup
1 1/2 c. unbleached all-purpose flour
1 1/2 tsp. baking powder
1 c. walnuts, toasted and chopped
Directions:Preheat oven to 375 degrees and line 12 muffin cups with paper liners (or coat with nonstick cooking spray). Beat butter and sugar together in a large bowl until fluffy. Add eggs, milk, and maple syrup, beating on low speed to combine. Add flour and baking powder and blend thoroughly on low speed. Add walnuts, stirring until well incorporated. Spoon 1/4 cup of batter into each muffin cup. Bake until golden and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Serve warm.
