Oreo® Cookie Cake

This is a cake recipe that my family just craves. Over the summer, especially for picnics, I am asked constantly to make this cake, especially for my nephew. We actually make this for his birthday as his birthday cake.

Cake…

Ingredients:

 

35 chocolate sandwich cookies, crushed into crumbs
1/3 c. semi-sweet chocolate chips, mini
1/3 c. all-purpose flour
1/4 c. butter (not margarine)
1 18.25-ounce butter cake mix (must be butter)

Directions:

 

Preheat oven to 350 degrees. Spray a 9x13-inch pan with cooking spray. In a large bowl, combine the cookie crumbs, chocolate chips, flour and butter. Mix together with a fork. Set aside. Mix cake according to directions on the package (make sure you use butter). Pour half of the cake batter into the pan. Sprinkle with approximately 2 c. of the cookie mixture on top. Pour remaining cake batter over layer of cookies. Sprinkle with remaining cookie mixture on top. Bake at 350 degrees for 40 to 45 minutes or until a toothpick inserted into center of cake comes out clean. Cool completely.

Glaze…

Ingredients:

1 c. confectioners’ sugar
3 T. milk

Directions:

Mix glaze and drizzle over the top of the cooled Oreo
® cookie cake. This cake freezes well. After thawing, drizzle cake with glaze.
