Applesauce Cake

Ingredients:
1/4 pound sweet/unsalted butter
2 c. sugar
2 eggs
2 1/2 c. flour
1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground allspice
1/2 c. water
1 1/2 c. applesauce
1/2 c. chopped walnuts or pecans
1 c. dark raisins
Confectioners’ sugarDirections:
Cream butter and sugar in a large mixing bowl. Add eggs, one at a time. Sift together the flour, baking powder, baking soda, salt, cinnamon, cloves and allspice. Add dry ingredients alternately to butter mixture with the applesauce. Add water. Add nuts and raisins. Put into a greased Bundt® or tube pan. Bake for 1 hour at 350 degrees or until a tester inserted in center comes out clean. Cool in pan for 10 minutes. Unmold and let cool on a rack. Sprinkle with confectioners’ sugar before serving.
