Rhubarb Bread

This is a delicious and healthy treat!

Ingredients:

 
1 egg
1/2 c. honey
1/2 c. butter, melted
1 c. orange juice
1 and 1/2 c. finely chopped rhubarb
3/4 c. chopped walnuts or almonds
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ginger
1 tsp. each cinnamon and nutmeg (or to taste)
 
Directions:

Preheat oven to 350 degrees. Beat egg with honey, fruit, juice, butter and walnuts. In separate bowl, mix dry ingredients. Mix dry into wet in stages. Pour batter into pans. Bake 45 minutes if using two 7x3-inch pans, or 50 minutes for one 9x5-inch pan. Cool 10 minutes.
